Bursting with Umami – All-Natural Furikake

Among dashi ingredients, bonito flakes and kombu retain especially rich umami even after simmering for three minutes, making them perfect for a flavorful “okaka” furikake.

Inspired by this dashi, this is created a simple, Kyoto-style okaka-style furikake by combining bonito flakes, kombu, shiitake mushrooms, and a hint of aromatic Japanese pepper (sansho) for a subtle kick. Soft and moist in texture, it blends well with dishes, and even as a powdered seasoning, the rich umami of the dashi bursts with every bite.
